What do you do with your bumper crop of zucchini?
I like to cut some up and fry it with butter, onion and garlic. I like to make bread and muffins and cookies. BUT, there's usually an over-abundance. What to do then (and no, you should NOT be leaving them on your neighbor's porches while they are out!).
I get out my Salad Shooter (one of my favorite small appliances!) and shred it. I then divide them into 2 cup portions and bag them into freezer bags....label and anytime you're ready to make bread, muffins or cookies in the middle of winter....just pull out a bag, put in a colander to drain and then use.
Waste not, want not!

zucchini pizza
ReplyDelete4c. shredded zucchini;place in strainer sprinkle with salt,let stand for 10 mins.
2 eggs,1/2 c.parmesan cheese,1c.cheddar cheese,2c.mozzarella cheese, 1Ib.ground beef,1/2c.onion,1c.(15)oz. italian tomato sauce and .1 green pepper
squeeze out moisture of zucchini, add the eggs, 1/4c.of the parmesan cheese,&1c.of the mozzarella, 1/2c.of the cheddar cheese .press into 13x9 baking dish. bake uncovered at 400* for 20 mins.meanwhile,cook beef and onion add
add tomato sauce. spoon over zucchini mixture sprinkle with remaining cheeses, add gr.pepper
bake 20 mins longer. 6-8 servings yumm
